Directions:
For the chicken:
Before assembling the pizza, the chicken MUST be cooked FIRST. With
this recipe, I chose to use the crockpot, but you can use the stove, oven, or even the grill…whichever you prefer.
- Cut and clean the chicken. For this recipe you really only need 1-2 chicken breasts, but I used more for meal prep for the week.
- Add chicken to the crockpot.
- Add 1/2 can of chicken broth to the crockpot.
- Add 1 pack of ranch seasoning to the crockpot.
- Add 1 cup of buffalo wing sauce to the crockpot.
- Mix all the ingredients together.
- Cook on high for 4.5 hours OR low for 8 hours.
- Shred chicken.

Rest of the pizza:
- Preheat the oven to 450 degrees.
- Put the cauliflower crust on a cooking sheet and spray with a little bit of cooking spray.
- Allow the crust to roast for five minutes.
- Take the crust out of the oven and cover with the buffalo hummus (3 tablespoons), cheese (1/4 cup), red onion, banana peppers, and chicken.
- Allow pizza to cook for 13-15 minutes.
- Broil for one minute if you are feeling the crispy.
